Our  first destination in this series  of my favorite seafood dishes from around the world  will lead us to the place where everything began. Timmendorfer Strand in Germany , the root of my beautiful culinary odyssey. 

 

 1. Timmendorfer Strand, Germany .

A paradise for Seafood lovers on the coastal line of northern Germany with one  of my favorite Seafood dishes:

Flounder à la Büsumer Art 

Timmendorfer Strand, a breathtaking coastal town on the Baltic Sea in Schleswig-Holstein, Germany, is more than just a scenic destination; it's the fabric of my culinary soul. This beautiful area, with its miles of sandy beaches, idyllic scenery, and the iconic lighthouse pier, nurtured my passion for food from a tender age.

I remember the early mornings when my father took me fishing for herring out on the lighthouse pier. The air was crisp, filled with the briny scent of the sea, and the world seemed endless as we cast our lines into the shimmering water. Those were the moments when I fell in love with the sea and everything it offered.

My culinary journey began in Timmendorfer Strand at the young age of 16. It was one of the many vital stations during my formal culinary training. After long and stressful days in the kitchen, I would often find solace on the beach with an ice-cold beer, watching those big ships sail away into the horizon, dreaming about the day I would be on one of those ships to explore the world.

One of the most remarkable parts of my time in Timmendorfer Strand was meeting and working with my dearest friend, Chef Katharina, at the renowned Restaurant König Timme. We met way before our kitchen collaboration, but our friendship blossomed amid the controlled chaos of a professional kitchen.

We had our fair share of crazy times: the sheer endless nights cooking for an unimaginable number of guests, the sweat, blood, and tears from burns, bruises, and cuts. The stress with servers was real, but so was the joy and unity of a team that danced in perfect harmony, like a ballet performing the culinary version of the Black Swan.

Katharina was my anchor during those intense times, calming me down when I exploded over misunderstandings about steak doneness or complications with demanding guests. Together, we navigated the culinary waves, creating beautiful dishes from the rich variety of German seafood.

Among those dishes, one that holds a special place in my heart is Flounder à la Büsumer Art. This local delicacy, a combination of flounder cooked with shrimp and asparagus, encapsulates the essence of the region. It's more than a dish; it's a memory, a tribute to a place, and a symbol of a time that defined who I am today.
