Ingredients:

  • 6 ripe organic peaches
  • 2 jalapeno peppers
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup apple cider vinegar
  • 1/2 cup honey
  • 1/4 cup lime juice
  • 1 pinch salt

Instructions:

  1. Begin by blanching the peaches. Bring a pot of water to a boil and prepare a bowl of ice water. Cut a small "X" on the bottom of each peach and carefully place them in the boiling water for 30 seconds. Remove the peaches with a slotted spoon and transfer them to the ice water. Let them cool for a few minutes before peeling the skin off. 

  2. Once cooled, remove the skins from the peaches, and cut them into small pieces. Set aside.

  3. Next, prepare the jalapeno peppers. Cut off the stems and slice the jalapenos in half. Remove the seeds and membranes, then chop the peppers into small pieces. 

  4. In a medium-sized saucepan, heat 1 tablespoon of oil over medium heat. Add the chopped onions and sauté until translucent, about 3 minutes.

  5. Add the minced garlic and chopped jalapenos to the saucepan, and cook for another 2-3 minutes.

  6. Add the diced peaches to the saucepan, along with the apple cider vinegar, honey, lime juice, and salt. Stir well to combine.

  7. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the peaches are soft and the liquid has thickened.

  8. Remove the saucepan from heat and let it cool for a few minutes.

  9. Use a blender or immersion blender to blend the mixture until smooth.

  10. Pour the sauce into a sterilized glass jar and let it cool completely before storing it in the refrigerator.
