Ingredients:

  • 1 fresh large pineapple, peeled and chopped
  • 1-3 fresh ghost peppers, stemmed and chopped (wear gloves when handling)
  • 2 cloves garlic, minced
  • 1/4 cup white vinegar
  • 1/4 cup water
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 1 tablespoon soy sauce
  • 2 tablespoon lime juice
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper

Instructions:

  1. In a blender or food processor, puree the chopped pineapple until smooth.

  2. Add the chopped ghost peppers, garlic, white vinegar, water, honey, soy sauce, lime juice,  smoked paprika, black pepper,  and salt to the blender.

  3. Puree the mixture until completely smooth and all ingredients are well combined. Be careful when blending as the fumes from the ghost peppers can be quite strong.

  4. Pour the mixture into a small saucepan and bring to a boil over medium-high heat.

  5. Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened and the flavors have melded together.

  6. Remove the saucepan from heat and let the sauce cool for a few minutes.

  7. Using a fine mesh strainer or cheesecloth, strain the sauce to remove   any remaining solids.                                                                                     

  8. Transfer the sauce to a clean glass jar or bottle with a tight-fitting lid.  

  9. Let the sauce cool completely before refrigerating. It will keep in the fridge for up to 3 months.
