  • 4 ounces (115g) pancetta or guanciale, diced
  • 3 large egg yolks
  • 1 cup grated Pecorino Romano cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Freshly ground black pepper, to taste
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

 


Instructions:

1. Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente, usually around 8-10 minutes. Drain the pasta, reserving about 1/2 cup of the pasta water for later use.
2. While the pasta is cooking, heat a large skillet over medium heat. Add the diced pancetta or bacon and cook until crispy and golden brown. Remove from the heat and set aside, leaving the rendered fat in the skillet.
3. In a medium bowl, whisk together the eggs, grated Parmesan cheese, grated Pecorino Romano cheese, minced garlic, and a generous amount of freshly ground black pepper. Set aside.
